2-Ingredient Emmy's Organics Peanut Butter Cups (Vegan + GF)

Reese’s Peanut Butter Cups…but like, healthier.

Emmy’s Organic Coconut Peanut Butter Cookies are freakishly similar to the inside of the classic peanut butter cup. Everything from the sweet nutty flavor to the chewy consistency of the cookie, one bite and I knew exactly what I needed to do. Melt down my favorite vegan chocolate chips and make my own peanut butter cups. Because, when life hands you Emmy’s Organics Coconut Peanut Butter Cookies, you don’t make lemonade. You make vegan and gluten-free Reese’s.

It’s only ~ on brand ~ for me to make this dessert as simple as possible. Hello, 2-ingredient recipe. We’re busy. We don’t have time to gather 17 different ingredients and let is cook for 48 hours. We’ve got workout classes to go to, happy hour to get bombed in, and first dates to cringe from. And even amidst our hustle and bustle, we still don’t want to resort to the unhealthy, processed garbage that tempts us in the CVS aisles. Well, we probably do at 2 a.m., but if we had these bad boys to go home to, we’d be less likely to give in to that grabbing temptation.

I’m dessert’s biggest proponent.

In the profound words of the Beibz—never say never to a bite (or 5) of something sweet everyday. Just know how to dessert wisely, and deprivation will not exist in your vocabulary. Emmy’s Organics cookies are gluten-free, vegan and made with minimal ingredients. The base of the cookies are organic coconut, agave syrup and peanut butter with hints of Himalayan pink salt for that salty ‘n sweet flavor punch. Each cookie has 3 grams of protein, 2 grams of fiber and 8 grams of healthy fats; so you don’t need to feel bad about going for seconds…or thirds.

2-Ingredient Peanut Butter Cups (V +GF)

Use This:

Do This:

  1. Pour the chocolate chips in a bowl and microwave for 30 seconds.

  2. Stir and microwave for another 30 seconds.

  3. Stir. Depending upon strength of your microwave and material of your bowl, you may need to microwave for another few seconds. Only add 10 seconds at a time, chocolate burns easily and it’s not salvageable!

  4. Once fully melted, dip your Emmy’s cookies in the chocolate.

  5. Place on parchment paper and pop in the freezer for 30 min.

  6. Leave in fridge and enjoy!
