Chocolate Chip Cookies Cure Everything (Vegan + GF)

It’s not a coincidence that a good ol’ plate of milk + cookies were the go-to feel-good treat of choice in our childhood. As an unqualified historian, I’m here to tell you that if you’ve got a good thing going, keep doing it.

Chocolate Chip Cookies Cure (but are not limited to):

  • Pressure from your boss

  • Hangovers

  • Study Burnouts

  • Broken Hearts

  • Being Ghosted

  • Boredom

  • Increasing feelings of self doubt

  • Lessened feelings of turmoil

  • Workout Motivation (gotta work ‘em off somehow!)

No-Turmoil Cookie Recipe

Ingredients:

  • 1 cup all purpose GF baking flour (I use Bob’s Redmill)

  • 2/3 cup coconut sugar

  • 1/4 cacao nibs (or dark choc chips— I use Navitas Organics or Enjoy Life!)

  • 1 vegan egg (I use Namaste or Bob’s Redmill or can make flax/chia egg)

  • 3 Tbs nut milk (I used homemade milk using Ellie’s Best- use code SAMMIBROOKE for 10% off your order!)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 tsp vanilla extract

Here’s How To Make It:

  1. Preheat oven to 325 F

  2. Mix all ingredients in a bowl until formed into a well-combined dough

  3. Refrigerate dough for roughly 10 min (or ya know, just eat half of it from the bowl)

  4. Use a tablespoon to scoop out dough + form into balls

  5. Line on a lightly greased cooke sheet

  6. Bake for 12-15 min

  7. PRO TIP: in the following days after making the cookies, heat up in microwave for 10 seconds and slather on some nut butter!
