I Just Stuffed Christmas Inside A Bowl (Vegan + GF)

Eggnog. Peppermint. Chocolate. Warming spices.

I feel like Oprah when I say: I. Love. bread Christmas.

Ever love something so much you just want to eat it? No? Just me? Lies. Just wait until you get your hands on this vanilla eggnog smoothie bowl topped with a refreshing Emmy’s Organic Double Chocolate Mint Cookie and Kween&Co.’s Granola Butter. It’s truly the most festive dish you will eat this Christmas season. And in the name of being in turmoil, it’s probably the quickest and easiest Christmas-themed dish you will make too.

We all fear that holiday season fluff—and while I totally promote embracing it in the name of family, friends & memories—implementing healthy meals whenever possible will keep you feeling your best.

I’ll never turn down a slice of cake, but I’ll also make sure I did something good for my body too. That doesn’t mean eating lettuce all day so you can binge at the holiday party later on. Actually, restricting yourself of delicious food will only cause you to over-eat on that dessert platter. When our minds and bodies feel satisfied, we don’t experience such severe cravings. That’s why I eat ice cream for breakfast every morning. I’m not talking about Ben & Jerry’s (though, let’s be honest…that would be pretty dope), I’m talking about NICEcream. The ice cream that loves you back. This Christmas In A Bowl is packed with protein, carbs, and healthy fats that won’t spike your sugar levels or compromise your energy. But the best part is, it tastes like a decadent sundae.

Emmy’s Organic cookies are all gluten-free, vegan & made with minimal, all-natural ingredients.

More importantly, they’re like crack. I’m serious, it’s hard to stop at one. The consistency is similar to a macaron—chewy with a slight coconut crunch. My favorite way to eat them is crushed on top of a smoothie or oatmeal bowl. You already know I don’t mess around with my toppings.

So now, when you tra-la-la along to that holiday party tonight, you’ll have the energy to rage, the comfort in knowing you’ve consumed your daily nutrients, and actual satisfaction thanks to your decadent AF smoothie bowl from breakfast.

Vanilla Eggnog NICEcream ft. Choc Peppermint Crumble

Use This:

Do This:

  1. Put all smoothie ingredients in a blender and B L E N D.

  2. Stop & scrape to make sure all ingredients are well combined. Only add liquid if your blender really needs it. The less liquid, the thicker your nicecream will be.

  3. Crush an Emmy’s cookie and drizzle on that granola buttuh.

  4. Pro-tip: pour it into a stainless-steel, temperature controlled cup (like Healthy Human) and bring that bad boy to work as an on-the-go breakfast. Your coworkers will be riddled with envy.
