Namaste Foods Series: Millet Banana Pecan Muffins (Vegan + GF)

The gluten-free girl is at it again. This time with millet flour.

Not to be confused with “mullet flour.” I kid, I kid. But these pancakes do mean business while still having a good time. So, I guess millet flour is sort of like a cousin to mullets? What even am I saying? Who let me ramble for this long?

Back to the muffins. Who doesn’t love to wake up to a warm, sweet pastry in the morning? I know I do. The problem is, like, we’re adults now. We have to make adult decisions. And sometimes, those decisions include foregoing the 50g of sugar in the Dunkin Donuts muffin that’s screaming your name from behind the register. What? Just me?

Luckily, we live in a modern age where brands turn healthy grains into flours and sell them to us grateful consumers.

In 1/4 cup of millet flour, you’ll be feeding yourself 3g protein, 4g fiber and only 1g fat. Namaste Foods has proven to be my favorite brand for all things allergy-free. That’s right, turmoilers. If you’re avoiding gluten, dairy, eggs, nuts, or soy, you’re in the clear. Some unique flours they sell include millet (duh), quinoa, garbanzo bean, sorghum, and brown rice. But they’re not just a flour brand, they also sell boxed baking mixes, a vegan egg replacer mix, soup cups, cake cups and Easy Meals.

If you’re on-the-go in the morning or always feeling like it’s snack-o-clock, these muffins are a must.

To be honest, it may appear as though I’m not lazy in the kitchen, but I am. Do I enjoy taking time to bake more complicated recipes? Sure. But that’s not my daily life. I like quick, simple, minimal-ingredient type of recipes that won’t contribute to, like, heart disease and shit. If you’re in your twenties and you can’t be bothered to buy 36 ingredients for a healthy baked snack, then do not leave this page without screenshotting the recipe.

Millet BananaPecan Muffins (V + GF)

Use This:

Do This:

  1. Preheat oven to 350.

  2. Make your vegan egg using Namaste Foods vegan egg replacer. Combine 2 tsp of the vegan egg mix with 2 T water. Mix well.

  3. In a large mixing bowl, combine the millet flour, coconut sugar, cinnamon and baking powder. Mix well. Add in the vegan egg, sunflower butter and nut milk. Mix until well combined.

  4. Line a muffin tin with non-stick paper cups OR spray a muffin tin with oil spray. Scoop in the muffin mix.

  5. Bake for roughly 25 min (depending upon the size & strength of your oven).

  6. Flip your mullet over your shoulder like a damn queen and bite into that millet muffin,
