Real Food Cacao Coconut Mousse Cups
No mousse were harmed in the making of this dessert.
Figured I’d throw that out there. But what was harmed was my ability to refrain from sweets at night. Good thing these bad boys are made with REAL food. No, seriously. They’re made with Real Food Bars. The cacao sea salt flavor to be exact. It’s amazing what a bar can become. It’s not just your on-the-go fuel. It can be toppings on a smoothie bowl, a vessel for some peanut butter, or—in this case—the crust of a mousse cup.

Late nights and early mornings leave little time for meal prep and thinking about making healthy choices. When you’re happy hour extends far beyond 60 minutes, your mornings are probably riddled with headaches and bloated bellies. That’s fine, but let’s balance that out. So, if you didn’t go to happy hour tonight, here’s something to keep you occupied. Best part? You can bring these healthy, decadent cups to work and watch as jealousy ensues around you.
Use This:
Crust:
2 Cacao Sea Salt Real Food Bars
2 Tbs Chocolate Granola Butter (Kween&Co) (can sub other nut/seed butter, but add cacao powder to this mix)
Mousse:
10 Tbs heavy coconut cream
1 packet Nibor Drinking Chocolate (can sub raw cacao powder, but add more sweetener)
2 Tbs maple syrup
1/2 tsp vanilla extract
pinch of salt
Do This:
Pulse the crust ingredients in a blender or food processor. Stop & scrape every few seconds. It’s a labor of love, people.
Combine all mousse ingredients and whip until well combined and airy.
Press your crust into a muffin tin. Pout in the mousse.
Freeze until you’re ready to freakin’ INHALE them. Yeah. They’re that good.
