Right Foods Series: Easy + Cheap Black Bean Buddha Bowl (Vegan + GF)
Black Bean Buddha Bowl…
Try saying that one 5 times fast. I’m all about the alliteration, but what I’m loving even more is how simple, quick and healthy this meal option is. Right Foods brand is killing the game in the flavor department and turning my sad, little bowl into a fiesta in my mouth. I’m not speaking in hyperbole when I say this buddha bowl is rivaling Chipotle for me right now.
Over the weekend, I romanticize the time I think I have, dreaming up all of the delicious meal preps I’m going to make in the middle of running errands, catching up on sleep, spending time with friends, squeezing in a workout and obvi binging some Netflix. It’s not that I don’t prioritize my health, it’s just that life is about so much more than food.
This Black Bean Buddha Bowl needs very little prep and will stave off that ugly hanger with all the fiber, protein and healthy carbs.
I’m easy and cheap!
Ok, while those adjectives might not be the most endearing to use when describing myself, they’re definitely the words I like to use when talking about meals. Right Foods Black Bean and Lime Soup takes a grand total of 90 seconds to make. You can buy a 6-pack of soup cups for $13—that’s about $2 per meal. For a quick grain option, try Birds Eye Steamfresh Brown Rice. The only ingredient in there is brown rice and it takes 4 minutes to heat. Clean and quick, thanks to the modern era in which we live.
As for the nutritional breakdown of Right Foods’ soup, one serving is packed with 21 grams of plant-based protein, 15 grams of fiber, and only 1.5 grams of fat. Your muscles will be bumping, your poops will be flowing, and your arteries will certainly not be clogging. Like I said, food should not constantly be on the forefront of your mind, but it is important to know what you are putting into your body. If you’re going to go the easy and cheap route, make sure it’s not totally compromising your health. When you eat good, you feel good. And when you feel good, you do good. And that’s pretty good, if you ask me.
(Serves 2)
Use This:
1 Microwaveable Brown Rice Bag (I used Birds Eye Steamfresh Brown Rice)
Favorite veggies (I used pre-roasted broccoli, cauliflower & asparagus with some cucumber slices. You can use Birds Eye Steamfresh Frozen Veggies or any veggies you have prepped on hand!)
Do This:
Follow heating instructions on the soup cup (pour in spices + add water to line + heat for 90 seconds + let sit to thicken)
Follow heating instructions on the frozen rice bag (place face down + heat for 4 minutes)
Assemble your bowl. Pour in the rice, scoop out some thick AF black bean soup and add on your veggies. Makes 2 bowls or 1 big bowl because ain’t nobody can tell you how to live yo life.
