Right Foods Series: Leftover Broth Grain Bowl
Money is tight when you’re in your twenties and no food shall go to waste.
After making my Healthy Vegan Ramen Burger using Right Foods Vegan Chicken Flavor Ramen Soup, I had a whole cup’s worth of leftover ramen broth that needed some loving. I pondered pouring it down the drain for the briefest of moments, but then remembered I’m not at a place in my life where I can really afford to let anything go to waste. If you’ve made your ramen burger for dinner, then you now have a reason to meal prep your lunch for tomorrow. Call me stingy, call me frugal…I’m just a twenty-something girl on a budget. And you are too, if I’m guessing correctly. And if not, please adopt me.
Leftover broth is perfect for giving a really strong flavor punch to a really bland grain, without adding in loads of fat or calories. I don’t track my macros, but I’m obviously aware that it’s beneficial to cut down on the nutritionally worthless additives. With that being said, no one wants a tasteless meal; you just have to learn how to add flavor wisely.
In the name of uniqueness, I decided my grain of choice would be millet. Millet is packed with 6 grams of protein, 2 grams of fiber, a whole range of B-vitamins, magnesium, zinc and copper. I’m not a nutritionist, but damn that sounds promising. If you don’t have millet on hand, you can always swap out for another grain. You just won’t be as cool as me, but it’s fine…not everyone can.
Use This:
Leftover broth from your Healthy Vegan Ramen Burger recipe (using Right Foods Vegan Chicken Flavor Ramen Soup)
Additional water needed to cook your grain of choice
Grain of choice (I chose millet)
Optional Add-On’s: Arugula, roasted veggies, plant-based protein, veggie burger
Do This:
Pour your leftover broth into a measuring cup. Add however much remaining water is needed to cook your grain (see cooking instructions on the bag for your chosen grain).
Follow cooking instructions for your grain, using your leftover broth as the liquid.
Wait until it cooks, obviously.
Literally that’s it. Add on whatever your little heart desires to dress up that bowl and make it a damn fine meal.
