Mac On That

Vegans are infamous for concocting the most absurd mixtures and calling it, like…cheese.

Guilty as charged. I threw some random ingredients into a blender and poured it over pasta and viola! Mac NO cheese. Before you run away screaming, lest we not forget that your box of Kraft Mac ‘n Cheese is made with cheese powder. I mean…come on. What even is that? At least my version has real, recognizable ingredients.

I’m the kind of person who obsessively latches on to one food item or ingredient for months on end until the mere sight of it is revolting.

Right now, that’s EBTB seasoning. For those of you who live under a giant boulder, that stands for, “Everything But The Bagel Seasoning.” You best believe I sprinkled that magical crack all up in this vegan cheese sauce. I’m sure by February I’ll burn this recipe to the ground and replace that secret ingredient with something different—though, I’m sure it won’t be a conventional ingredient either, but I can assure you my tastebuds never steer me wrong.

If you want to eat your favorite comfort food sans the anticipated self-loathing, then I’ve got just the thing for you.

Mac No Cheese

Use This:

  • 1 can pumpkin puree

  • 1/3 cup nutritional yeast

  • 1/2 cup soaked cashews (quick trick: soak in boiling water for 30 min)

  • Enough liquid to reach your preferred cheese sauce consistency*

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • copious amounts of EBTB (everything but the bagel) seasoning

  • 1 box of pasta

Do This:

  1. Boil water and let the cashews soak for 30 min.

  2. Once the cashews are soft, strain out the water and pour the cashews into a blender with all other sauce ingredients and blend.

  3. Stop and scrape down the sides to ensure a smooth consistency. Add liquid if you want it runnier. The more liquid, the thinner the sauce will be. Totally up to you!

  4. Once smooth and creamy, pour into a pot and heat. If you’re lazy like me (hiiiii!) put into a microwave safe bowl and heat for 1 minute. Stir. Heat for another minute.

  5. Pour over pasta and eat your mac no cheese. Please, leave your self-loathing in the boiling pot of water—this recipe doesn’t call for it.
